Stir Fry Chilli and Basil Chicken with Uncle Ben’s Special Fried Express Rice

Ingredients

Serves 4 Prep Time: 7 Mins Cooking Time: 8 Mins Cost per serving: £2.15 2 x Uncle Ben’s Special Fried Express rice 12 x Chicken fillets 4 x cloves of garlic 3 x large red chilli’s 300 g x green beans 2 x tbsp of fish sauce 1 x tbsp dark soy sauce 20g x basil leaves 2 x tbsp of vegetable oil

Preparation method

Method Roughly chop the garlic and chilli. Put both ingredients in a food processor with a tsp of vegetable oil and blend to a paste. If you do not have a processor place the garlic and chilli on a chopping board and finely mince with a knife, using the side of the blade to make a paste. Place a wok or large non stick frying pan over a high heat for 1 minute, heat the remaining oil and add the garlic and chilli paste. Stir-fry for 10 seconds then add the chicken and beans. Cook for 5 minutes stirring constantly, add the fish sauce, soy sauce, and the remaining chilli sliced on the angle. Continue to cook for 2 minutes. Whilst cooking heat the Uncle Ben’s Special Fried Express rice, add the basil leaves to the pan and stir into the chicken mixture. Serve immediately with the warmed rice.
