Ingredients
125ml long grain rice 400ml water Rind ½ lemon 2 egg yolks 250-300ml milk 2 tbsp sugar
Preparation method
Bring the water and lemon rind to the boil, wash the rice and add to the fast-boiling water. When the rice starts to soften (8-10 mins) drain and return to a clean pan. Beat the egg yolks with the sugar, mix in the milk and pour over the rice. Bring to the boil, stirring all the time, reduce the heat and allow to simmer gently until rice is cooked and soft and creamy. Serve sprinkled with powdered cinnamon. Country of origin: Portugal
