TUCO Winter Conference to give university caterers insight into emerging trends

The TUCO Winter Conference, which will take place at Newcastle University, is a free annual event that organisers say gives TUCO members the opportunity to ‘get together before Christmas to pick up some valuable insight ready to implement in the New Year’.

Each year the conference features content from experts within the hospitality industry discussing practical tips to gain a competitive edge in the market, through to thought-provoking sessions on key issues.

Speakers from across the industry will look at issues including food fraud, soil degradation and the reduction in nutritional benefits of food. They will also look at potential solutions for business such as laboratory-grown meat, energy use reduction and how robotics can support the hospitality industry.

TUCO chair Phil Rees-Jones said: “Against a looming backdrop of ever-escalating energy prices and interest rates, and with so much turmoil around, it’s unsurprising that we’ve taken ‘horizon scanning’ as the theme of the 2022 Winter Conference.

“Key speakers at the conference will consider how emerging trends and developments might potentially affect current practice and procedure. The aim being to give businesses a longer-term strategic approach, and to make present plans more resilient to future uncertainty.”

The event kicks off on Tuesday, November 29th with a drinks reception at Above, a rooftop bar at the Vermont Hotel for canapes and views over the River Tyne. Dinner will follow at Trakol, where the restaurant and microbrewery prides itself on sustainable practices and an ethos of ‘nose to tail’ cooking and using produce from its own kitchen garden.

The conference runs from Wednesday, November 30th to Friday, December 2nd, with confirmed speakers including Dr Sam Mudie, an energy manager at the University of Reading and an energy reduction consultant specialising in the hospitality sector. The event will also again see the launch of the new TUCO Global Food Trends with a keynote speech from Charles Banks of The Food People.

Other speakers are Thomas Gent from Gentle Farming, who will talk about soil degradation; Illtud Dunsford from Cellular Agriculture, who will explore developments in cultured protein; and Dr Ricardo Gouveia from 3DBiotissues and Newcastle University, whose area of interest is lab-grown meat.
