The event, which took place at the college’s restaurant, showcased the skills of 12 students enrolled on the Diploma in Professional Cookery Level 3 Course. TLC Gourmet believes that it is essential to provide opportunities for students to gain exposure to the world of professional hospitality.
Under Leatherbarrow’s guidance, these young chefs were given the opportunity to work with an industry leader to create a high-end themed dining experience for the public, with a focus on advanced patisserie techniques and methodologies.
Leatherbarrow said: “We believe in giving back to the industry by sharing knowledge, skills, and passion with those just starting out. As chefs, we are always learning, and part of that process is learning how to pass on what we’ve gained to those who want to follow in our footsteps. My team and I are excited to work with these students and help inspire them to pursue their culinary dreams.”
These events provide students with a ‘unique opportunity’ to interact closely with industry professionals in a more intimate, hands-on environment—where they can ask questions and learn about career pathways in a way that larger public events cannot offer.
Ian Jaundoo, executive chef at the college’s Academy Restaurant, added: “I have known Thomas for several years now and we have judged together at various regional and national culinary competitions. It is obvious that TLC Gourmet with Thomas leading, is a passionate advocate of high standards where classical and modern patisserie technique is concerned.
“He and his team of chefs (all talented in their own right) are a credit to the company and to the hospitality industry in general. This event is something that our students will take a great deal of inspiration from and encourage them to be inquisitive and creative where patisserie is concerned.”
