Abstract
BaxterStorey, the UK’s leading independent provider of workplace restaurants, delis and coffee bars, has announced it will now use only UK rapeseed oil for frying as part of the company’s commitment to local and sustainable sourcing.

John Bennett, co-chief executive at BaxterStorey, said: “We’re always looking for new ways to demonstrate our commitment to supporting Britain’s farmers and are proud to be going the extra mile to source all of our rapeseed oil from the UK.

“Rapeseed oil is actually enjoying quite a surge in popularity and is favoured by a number of Michelin starred chefs, as well as household names such as Jamie Oliver.

“Not only does it have a fantastic flavour, but it’s also a great source of important fatty acids, which are good for aiding blood circulation and promoting healthy skin.

“These added health benefits tap into the demand we’re seeing from customers for high quality, healthier alternatives.”

Rape is one of the three main crops produced on British farms and BaxterStorey’s decision not only increases its support for British farmers but means all used frying oil will be recycled into biofuel to power the rape delivery lorries, cutting CO2 emissions for both the caterer and its clients.

The contractor forecasts it will use 750,000 litres of the oil for frying over the course of the next year. In addition, it is sourcing a high-end, cold-pressed rapeseed oil from a single dedicated farm in the Cotswolds which will be used front-of-house and by chefs in its fine dining restaurants.
