The demand for plant-based meals continues to increase as more people adopt a 'flexitarian' approach to eating with vegetarianism and veganism gaining in popularity too. The plant-based recipe book is sponsored by Brakes, Middleton Foods, Premier Foods, Quorn, Upfield and SchoolGrid.
LACA chair Jacquie Blake said in the foreword: “We have known for many years that we need to eat more plant-based food and that a minimum of five fruit and vegetables a day is essential to a healthy lifestyle. Childhood obesity continues to increase and the service needs to continue to take action to improve healthy outcomes for future generations.
“LACA wanted to do more to help people create exciting and interesting plant-based dishes and menus, so together with six business partners we created this recipe book for you. Inside are 60 recipes, all designed for the school food service, split into chapters that reflect the daily meal service types, additionally all are nutritionally analysed for you and with allergens identified. We hope you find the book useful, as well as full of great ideas.”
The book contains 5 breakfast recipes, 11 grab n go items, 7 ideas for street foods, 13 main courses, 8 desserts, 5 after school recipes and 11 recipes from the 2021 School Chef of the Year (SCOTY) finalists including the winner Rob Chambers.
All of the recipes include an ingredients list, a method of how to replicate the dish and an allergens guide.
