To mark National School Meals Week (7-11 November) the Food Matters Live podcast is making a series of episodes looking at the challenges around providing nutritious food to children in school canteens.
Brad Pearce commented: “What members are telling us is they are having to look at buying in prepared sauces, frozen sauces, jarred sauces or things like bread mix and items like that which are technically processed and using that to supplement and fulfil the menu offer.
“Rather than again making tomato sauce from scratch, that is partly because shortages or costs of tomatoes but also because of recruitment issues in terms of having the pairs of hands available to do all of that work. That’s the change that we are currently seeing.”
