Abstract
EBLEX has just added 72 new cuts to its range, providing foodservice operators with a wider range of profitable cuts to add variety and interest to menus.
The entire range of new cuts is featured in the newly released Fourth Editions of EBLEX's acclaimed Meat Purchasing Guide and Cutting Specification Manual.
The total number of beef, lamb and mutton specifications - including the 72 new cuts - now stands at 320, all of which are available to download from www.eblextrade.co.uk.
The manual is available on DVD to members of the EBLEX Quality Standard scheme. All of the cutting specifications are included as individual PDF's.
Creator of the guide and manual, master butcher and project manager for EBLEX, Dick van Leeuwen, said: "Because consumer requirements and eating habits are constantly changing, we keep adding new products on to the market, not only to satisfy consumer demand, but improve carcase balance and utilisation.
"We regularly send out new specification sheets for any new cuts we develop to our scheme members to keep them up-to-date with current market trends. In this instance, because we've developed a significant number of new cuts and included mutton for the first time, it made sense to republish and publicise the latest editions."
Leeuwen concluded: "We have also uploaded and made the specifications available on our website; eblextrade.co.uk. Featured in easy-to-use interactive flip-books, simply click on an image to open a book, or click on the species below the book to go straight to that section."
