The colleges will now be put through their paces throughout February and March in the regional heats, where they will be tasked with creating and serving a delicious three course healthy lunch menu for the competition's discerning judges. They will be scored on how well the menus address key industry issues such as: nutrition, seasonality, provenance and sustainability.
Five teams will be selected and awarded a place in the finals that take place over the five days of the BBC Good Food Show Summer at the NEC in Birmingham, which runs from June 15-19. Each day one team will take on the task of preparing and serving lunch to 100 diners.
