Abstract
Over 400 executive chefs and managers from contract catering group CH&Co. are currently receiving specialist training to prepare them and their teams for major changes to food labelling regulations across the EU that will affect their day-to-day business.

Roadshows have been developed to handle the changes, which come into force on December 13th. CH&Co’s 3,000 strong staff will be taken through the new food labelling requirements before completing an online training course that has been devised by independent specialists specifically for CH&Co.

*Some of the changes taking place include:

• Mandatory nutrition information on processed foods;
• Mandatory origin labelling of unprocessed meat from pigs, sheep, goats and poultry;
• Highlighting allergens e.g. peanuts or milk in the list of ingredients;
• Better legibility i.e. minimum size of text;
• Requirements on information on allergens also cover non pre-packed foods including those sold in restaurants and cafés.

Emma Hill, Health & Safety Manager at CH&Co. said: “We are constantly reviewing and improving our training opportunities, and developing our staff so they can competently interpret the requirements of the Food Information for Consumers Regulation and its importance to the business. We see this as a natural extension of our chef nutrition training scheme, which is why we are committing so much time to training all Chefs in our B&I and Commercial business units.”

Signage, point-of-sale information and revised menu cards will also be rolled out in November and December to all of CH&Co’s food service business units including, Charlton House, Chester Boyd, Ampersand, Lusso and Apostrophe.

Earlier this year, CH&Co. was accredited the “Gold Champion Status: Investors in People” award for its positive working environment and development opportunities and is the only company within the contract catering industry to hold this status.
