Aramark celebrates ‘sustainable fish’ first in education sector

2nd Nov 2011 - 00:00
Abstract
Hugh Baird College in Merseyside has become the first Aramark site to gain Marine Stewardship Council (MSC) certification for its responsible fish sourcing policy.
The contract caterer has worked with the Merseyside college to "ensure that sustainable levels of fish and seafood are maintained to help safeguard the future of the oceans". It now plans to extend responsible fish sourcing its larger sites across the education sector. "This is an incredibly important milestone for Aramark, the education sector, and particularly for the college. "Not only is it the right way to do business, it's a very emotive area, as we are all passionate about protecting fish stocks for the future "Our team was required to create a robust traceability system to demonstrate that only fish bought under the MSC label is identified as such on our menus," said Andrew Main, Aramark UK chief executive. Pat Farrell, director of estates and resources at Hugh Baird College, said: "Hugh Baird College has a history of supporting sustainability projects and the MSC certification was a welcome initiative." Aramark catering manager John Cooney added he has worked closely with the college on a number of projects including One Water, which last year generated enough sales to provide a water well for a school in Africa. "The College were awarded Fairtrade status last year and again the Aramark team worked alongside students and staff to assist the College in achieving this accreditation," he said.
