Matthew, who was awarded an MBE last year for 'services to public sector catering and the hospitality industry' is also the immediate past-Chair of The University Caterers Organisation (TUCO).
He believes that caterers are showing, yet again, resilience and creativity in the face of the many challenges presented by the rising cost-of-living, inflation and food shortages.
But he cautions: "We mustn't be overly optimistic about what our caterers can do, but realistic. They need all the support we can give them."
He says his brief, as chair of the PSCA, is to get the different parts of the industry to 'unite and speak with a single, clear and concise message' when it makes its case to Government.
