Yam fritters

Ingredients

450g yams 2 eggs 60ml single cream 1 medium onion very finely chopped Flour Ground cloves Grated nutmeg Ground white pepper Salt

Preparation method

Boil the yams until tender - about 20 mins. Drain and peel, trimming any discoloured areas of flesh. Mash the yams until smooth, beat in the eggs and cream, add the finely chopped Onion and enough flour to bind the mixture, season to taste with the salt and spices. Form into round patties, approximately 5cm x 1½cm, dredge the patties with flour and fry in a shallow pan in hot groundnut (peanut) oil, fry until crisp and brown and serve immediately.
