Wild Rice Blinis with Matie Tatar

Ingredients

Serves 4: 150g USA wild rice (already cooked) 1-2 eggs 2-3 tbsp breadcrumbs Sunflower oil 6 slices of matie (young herring) 1-2 shallots 4 tbsp crème fraiche Finely chopped herbs Chopped chives

Preparation method

Preparation: 1. Combine the wild rice with the herbs, eggs and breadcrumbs, season with salt. Make into four patties and fry gently in the sunflower oil. 2. Finely chop the matie. Peel the shallots and chop, mix with the fish and arrange on top of the wild rice blinis. Garnish with chopped chives and serve with crème fraiche.
