Ingredients
For 4 large kebabs or 8 small 500g minced Welsh Lamb 1 large red chilli, finely chopped 2 large handfuls fresh mint and fresh coriander roughly chopped 1 small red onion, finely chopped Freshly milled sea salt and black pepper 1 egg 4 or 8 skewers
Preparation method
Combine all of the ingredients in a bowl and season well. Divide into 4 or 8 balls and squeeze each ball onto a skewer to form a sausage shape. Cover and rest in the fridge for at least 30 minutes. Pre-heat the grill and cook the kebabs for approximately 12 minutes, turning them regularly to ensure that they are browned and cooked through. Check that they are thoroughly cooked, then serve with warmed flat breads, salads and hummus. Recipe by Welsh Lamb
