Ingredients
30ml olive oil 450g diced lean stewing beef 2 medium onions, chopped 1 clove garlic, chopped 100g long grain rice, washed 200ml beef stock 400g peeled, chopped tomatoes 75g pitted green olives, halved 2 tbsp chopped flat leaf parsley Salt and pepper
Preparation method
Over a high heat, sauté the beef in the olive oil until the beef just starts to brown. Add the onion, garlic and rice. Stir well for a minute or two, then reduce the heat and stir in the beef stock and tomatoes. Season lightly and bring to the boil, reduce heat, cover and simmer for two hours. Add the halved olives and continue to cook uncovered for 20-30 mins until tender. Adjust the seasoning and garnish with the parsley. Country of origin: Tunisia
