Trinidad & Tobago-style grilled chicken

Ingredients

180ml vegetable Oil Juice of 3 limes 6 garlic cloves, chopped 1½ tsp black pepper 1 tsp hot pepper sauce 1 bay leaf, torn 3 tsp freshly chopped oregano 1½ tbsp freshly chopped coriander 4 large boneless chicken breasts

Preparation method

Place the oil, lime juice and seasonings in a bowl and mix well. Place the chicken in a shallow dish and pour the marinade over the chicken. Mix to coat well, then cover and refrigerate for 2 to 3 hours. Preheat the grill to hot and cook the breasts for 12-15 minutes on each side, basting with the marinade from time to time. Serve hot.
