Tilda Basmati Rice timbale with broccoli puree, pan fried porcini and smoked ricotta

Ingredients

Ingredients: (Serves 4) 250g Tilda Easy Cook Basmati Rice 150g Fresh broccoli 150g Porcini mushrooms 50g Smoked ricotta 2tbsp Extra Virgin Olive oil 50g grated Parmesan cheese Salt, pepper and grated nutmeg to taste 30g Butter Garlic to taste

Preparation method

Method: Cook the Tilda Easy Cook Basmati Rice in boiling water for 12-14 min. Boil the broccoli until soft then make into a puree adding salt and pepper and 1tbsp of Extra Virgin Olive Oil. Pan-fry the porcini mushrooms with Extra Virgin Olive Oil, butter and garlic then season with salt, pepper and grated nutmeg. Assemble all the ingredients when still hot in a mould or in a metal ring on a plate ready to be served. Grate the smoked ricotta over the top before serving. Recipe courtesy of Tilda
