Tantalizing Sweet & Sour Pork Stir Fry with Extra Pineapple & Egg Fried Rice

Ingredients Serves x4 Preparation time 3 minutes Cooking time 10 Minutes Cost per serving £1.75 1 x 500g jar Uncle Ben’s Sweet & Sour Extra Pineapple sauce 2 x 250g packs of Uncle Ben’s Express Egg Fried rice 350g x diced Pork 150g x sugar snap peas 150g x tin of sweet corn 1 x tbsp sunflower oil

Preparation method

Method 1. Heat a large saucepan on the stove top, whilst you bring a small saucepan of water to the boil next to it. 2. Add the oil & the diced pork to the large heated saucepan & brown in the pan for 3 minutes. Open the jar of Uncle Ben’s Sweet & Sour sauce with Extra Pineapple & pour over the browned pork. Bring to a simmer & cook for a further 4 minutes. 3. Next, blanch the sugar snap peas in the small pan of water & cook for 1 minute before draining. Open & drain the tin of sweet corn & add to the sweet & sour pork along with the blanched sugar snap peas. Heat the Uncle Ben’s Express Egg Fried rice in the microwave as instructed on packet. 4. Serve the steaming rice on 4 serving plates; spoon the Sweet & Sour pork next to the rice & serve.
