Serves 4 Preparation time 5 minutes Cooking time 20 minutes Ingredients: 1 tbsp Olive oil 450g Pork sausages 2 Onions, sliced 1 Garlic clove, sliced 1 tsp Fennel seed 100g South African grapes 2 tbsp Red wine vinegar
Method: 1. Heat the olive oil in a frying pan over a medium heat, add the sausages and cook for 10 minutes, turning every so often. 2. Stir in the onions and leave to cook for 5 more minutes until the sausages are browned and the onions are softened. 3. Add the garlic, fennel seeds and grapes and cook for 5 more minutes, stirring regularly, until the grapes are starting to soften. 4. Pour over the vinegar and swirl around the pan. 5. Cook for a few more minutes until the onions are sticky and the sausages cooked throughout. 6. Ideal served with mashed potatoes. Recipe courtesy of South African fruits
