Spinach soup

Ingredients

125g fillet beef 1 tsp salt 2 spring onions 1 clove garlic 1 tbsp sesame seeds 1¾ litres water 80ml soy sauce 500g leaf spinach

Preparation method

Slice the beef thinly and cut into 3cm flat squares. Slice the spring onions on the slant, very thinly slice the garlic. Grind the sesame seeds in a processor or pestle and mortar. Heat a little sesame oil in a thick-bottomed pan, briefly fry the beef, onions and garlic then add the sesame paste and soy sauce. Add the water and salt, bring to the boil and then simmer for 15mins. Pick and wash the spinach, add to the soup and cook until the spinach is just tender. Country of origin: Korean Republic
