Spanish Omelette and Smoked Salmon Salad

Ingredients

Serves 4 Ingredients: • 8 eggs • 500g potatoes • 5 Tbs of Extra Virgin Olive Oil • 100g smoked salmon • 1 Little Gem lettuce • 20 Capers • 8 Tbs of mayonnaise • Salt and pepper

Preparation method

Method: • Peel and dice the potatoes, then fry in the Extra Virgin Olive Oil. • Beat the eggs, mix in the potatoes and season with salt and pepper • Heat 3 Tbs Olive Oil in a non-stick frying pan. When hot, add the mixture. Let it cook • Once cooked, loosen the edges • Allow to cool • Cut the smoked salmon in ribbons • Wash and cut the lettuce • Mix together the salmon, the lettuce and the mayonnaise • Cut the omelette into portions and serve topped with a spoonful of the smoked salmon salad Recipe by the Interprofesional Olive Oil Spain
