Smoked Turkey and Wild Mushroom Mousse

Ingredients

Portions: 10 portions 700g smoked turkey 3tsp dried sage 200g cooked onion salt and pepper to taste 300g wild mushrooms, cooked 1,000g CreaVite Fraiche 100g water

Preparation method

Place the turkey, onion and most of the mushrooms in food processor and finely chop Heat CréaVite Fraîche to 85°C, add salt and pepper, sage and water Pour CréaVite Fraîche mixture onto the turkey and process until evenly mixed Pour into moulds and allow to set De-mould and serve with bread or crackers Chef’s tip:A delicious vegetarian version can be produced by substituting the smoked turkey for 200g crumbled Stilton and 200g cooked finely chopped celery, stirring these into the heated CréaVite Fraîche.
