Smoked Rannoch Ham and Mango Salad

Ingredients

Serves 2 as a starter or light lunch 100g Smoked Rannoch Ham 1 large mango removed from stone and cut into strips 125g ball mozzarella torn into strips Handful of basil leaves 3 tbsp olive oil 1 tsp honey 2 tbsp lemon juice

Preparation method

METHOD 1. Whisk together the olive oil, honey and lemon juice to make a dressing. 2. Combine the mango, mozzarella and basil leaves in a large bowl. 3. Divide the salad between two bowls, top with the prosciutto slices and serve with the dressing Recipes from Rannoch Smokery
