Simple Wild Alaska Salmon Stir-fry

Ingredients

Ready in 10 minutes Serves 2 Simply cut 2 x 175 g (6 oz) fillets of wild Alaska salmon into 2 cm (1 inch) chunks and put them into a bowl with 3 tablespoons of hoisin sauce and 1 tablespoon of sweet chilli sauce. Stir to coat and set aside. Now heat 2 tablespoons of stir-fry oil (cooking oil flavoured with garlic, ginger, sesame and spices) in a wok or large frying pan and add a 300g bag of fresh or frozen ready-prepared stir-fry vegetables. Cook for a couple of minutes, then add the salmon and mixture. Stir-fry briskly for 2 - 3 minutes until the salmon is cooked, yet the vegetables remain crunchy. Serve immediately.
