Sauté Pork Snow Peas and Uncle Ben’s Egg Fried Express Rice

Ingredients

Serves 4 Prep Time: 5 Mins Cooking Times: 8 Mins Cost per serving: £2.58 2 x Uncle Ben’s Egg Fried Express rice 1 x 500g jar of Uncle Ben’s Sweet and Sour sauce 400g x pork fillet 3 x cloves of garlic chopped 2 x sliced red onions 2 x tsp of fresh grated ginger 180g x fresh sugar snap or snow peas 1 x tbsp of chopped flat leaf parsley 1 x tbsp of vegetable oil

Preparation method

Method Heat a large deep non stick frying pan on the stove. Slice the pork into 1.5 inch strips, add the oil to the pan, and then add the pork and onions to cook for 2 minutes so the pork is sealed all over. Add the grated ginger, chopped garlic and peas and cook for a further minute. Next add the sauce and stir well whilst bringing the contents of pan to a simmer. Lower heat slightly and cook for 4 minutes. Separate the Uncle Ben’s Egg Fried Express rice in the packets then open the top of each pack and heat each for two minutes in the microwave.
