Salmon and Broccoli Pasta

Ingredients

Makes approx. 10 x 240g (8½oz) portions Ingredients 600g (1lb 5oz) penne pasta shapes 200g (7oz) broccoli florets 1tbsp sunflower oil 300g (10½oz) chopped onion 800g (1lb 12oz) boneless, skinless salmon pieces 200g (7oz) frozen peas small handful freshly chopped oregano or 1tbsp dried 1.2Ltr (2pt) MAGGI Multi-Use Tomato Sauce

Preparation method

Method Cook the pasta according to pack instructions adding the broccoli towards the end of the cooking time. Heat the oil in a large pan, and soften the onion. Add the salmon, peas, oregano and tomato sauce. Simmer for about 5 minutes until the salmon is cooked through. Drain the pasta and return to the pan. Stir in the sauce. Sprinkle over more oregano and serve. Tip: This salmon recipe is great served over hot, steamed cous cous or quinoa. This recipe if from Nestle Professional Maggi menu solutions
