Rubicon Strawberry and Watermelon Ice Lollies

Perfect for kids and adults alike, these fruit lollies are so refreshing –and they’re good for you too! How cool is that? Preparation time 15 minutes Freezing time: 4-5 hours Serves: 6 Cost per portion: 33p 300ml/1/2 pint Rubicon watermelon juice drink 200g/7oz watermelon, peeled, deseeded and cut into chunks 200g/7oz strawberries, stalks removed

Preparation method

1. Put the Rubicon watermelon juice drink, watermelon and strawberries into a blender and blend for about 20 seconds until pureed. Alternatively, use a hand-held stick blender to puree the mixture 2. Pour the liquid into ice-lolly moulds and transfer to the freezer. Freeze for 4-5 hours, until solid. Cook’s tip This recipe can easily be transformed into a refreshing Strawberry and Watermelon Granita. Simply freeze the liquid in a bowl, stirring it with a fork every hour for 3-4 hours to break up the ice crystals.
