Roasted Vegetable Ratatouille Jacket Potato Filling

Ingredients

Makes approx. 10 x 125g (4½oz) portions Ingredients 600g (1lb 5oz) courgettes, sliced 250g (9oz) fi nely sliced red onion 400g (14oz) chopped mixed peppers small handful freshly chopped oregano or 1tbsp dried 3tbsp sunfl ower oil 800g can MAGGI Multi-Use Tomato Sauce

Preparation method

Method In a large, deep roasting tin, toss the vegetables with the oregano and oil. Roast in an oven preheated to 240ºC, 475ºF, Gas Mark 9 for about 40 minutes, stirring halfway through. The vegetables should be cooked and slightly charred. Stir through the tomato sauce and use to fi ll jacket potatoes or stir into freshly cooked, hot pasta. Serve with grated cheese.
