Number of portions: 22 Ingredients 450g (1lb) McDougalls Pizza Base Mix 150g (5oz) mushrooms, sliced 100 (4oz) courgettes, cut into small cubes 100g (4oz) red peppers, cut into small cubes 150g (5oz) onion, cut into small cubes 2 x 15ml (2tbsp) vegetable oil 325ml (12fl oz) warm water 5 x 15ml (5tbsp) pizza topping
Method 1. Place all the vegetables on a baking sheet, sprinkle with the oil and season. 2. Cook at 200°C/400°F/Gas Mark 6 for 20-25 minutes until vegetables begin to brown at the edges. 3. Make up the McDougalls Pizza Base Mix – place the mix in a bowl fitted with a dough hook and blend in the water. Continue to mix for 5 minutes on a medium speed. 4. Roll out into a large oblong to fit a greased 25cm x 35cm (10” x 14”) baking tin. 5. Spread the pizza base with the pizza topping, then scatter the vegetables evenly over the base. 6. Bake at 220°C/425°F/Gas Mark 7 for 15-20 minutes. 7. Cut into squares and serve.
