Ricotta, Fig, Nectarine, Parma Ham and Maple Syrup Open Sandwich

Simple sandwiches are always the best – and this is a perfect example. Enjoy! Serves 4 Ingredients 1 loaf ciabatta bread 1-2 tablespoons olive oil 225g (8oz) ricotta cheese 2-3 fresh or semi-dried figs, sliced 1 ripe nectarine or peach, pitted and thinly sliced 4 teaspoons maple syrup or clear honey Freshly ground black pepper, to season 8-12 slices Parma Ham

Preparation method

Cooking Instructions • Slice the ciabatta loaf in half horizontally, then cut each piece in two. Drizzle with a little olive oil, then spread ricotta cheese generously over each piece • Arrange the figs and nectarine or peach slices on top of the ricotta, then drizzle one teaspoon of maple syrup or honey over the fruit.
