Rice Congee Soup

Ingredients

Serves 10 Ingredients • 1 small bunch coriander, chopped • 300g shredded cooked chicken • 500g onions finely chopped • 500g US long grain rice • 25g chicken bouillon • 60g ginger purée • 50g garlic purée • 2g ground white pepper • 4g salt • 2ltr water

Preparation method

Instructions 1. Sauté the onions, garlic and ginger. 2. Add the chicken stock (bouillon dissolved in the water) 3. Cook for 10 minutes and then purée with a stick blender. 4. Add the rice and gentle simmer until the mixture starts to look like porridge. 5. Season with salt and pepper. 6. Warm the chicken in the steamer for 20 seconds and add to the soup. 7.
