Rainbow Cakes

Ingredients

Makes 12 cakes 175g soft margarine 115g Fruisana Fruit Sugar 175g self-raising flour 3 large eggs For marble effect 1 tbsp cocoa powder 15 drops of yellow food colouring 15 drops of red food colouring

Preparation method

1. Place all the cake ingredients into a bowl and beat to combine until well mixed. Divide the mixture into three basins. To one stir in the cocoa powder and blend. To the other two stir in one the yellow colouring and the other the red colouring. 2. Place the 12 cake cases into a 12 hole bun tin. In each cake case place 1 tsp of each mixture. 3. Bake in a fan oven 170°C, electric oven 190°C or gas mark 5 for 15-20 minutes until well risen, springy and golden. 4. Allow to cool for 5 minutes in the tins before placing on a wire rack to cool completely. Recipe from Fruisana
