Ingredients 10 x 250g Larder trimmed pork cutlets 15mls Oil 600g Pickled red cabbage 10g Dijon mustard 150g Apple sauce 15g Brown sugar 200mls Light Bitter or Pale Ale
Preparation method
Method Brush the pork cutlets with the oil and cook on a pre-heated char-grill until grill marks are clear and the meat is browned on both sides. Try to get cross grill marks as these add to the aesthetics of the dish. Place the pickled cabbage in an ovenproof pan. Add the red cabbage, mustard, apple sauce, and brown sugar. Place pork cutlets on top of cabbage mixture, add ground pepper to taste, and cover with beer. Place uncovered in a preheated oven for 30-40 minutes. Serve with chive mash.
