Pineapple on Fire

Ingredients

Serves 8 1 large ripe pineapple 100g butter 50g Fruisana Fruit Sugar 2 small dried chillies, finely diced ½ tsp ground black pepper

Preparation method

1. Peel the pineapple, remove any ‘eyes’ and then cut the pineapple in half lengthways, then into half again. Remove the centre core from each quarter then cut each piece into chunks, 6 - 8 per piece. 2. Melt the butter, stir in the Fruisana, chillies and pepper. Mix well. 3. Brush each cube of pineapple with the butter mixture. Heat a frying pan and then carefully heat the pineapple, adding more butter mixture as necessary. 4. Place on a baking tray and cook in an oven fan oven 160°C, electric oven 180°C, gas oven mark 4 for 1-15 minutes until crispy on the surface. 5. Serve with ice cream. Recipe by Fruisana
