Picota Cherry and Apple Chutney

Preparation time: 15 minutes Cooking time: 40 minutes Ingredients: 2 tbsp Olive Oil 2 Red Onions, sliced thinly 250ml Cider Vinegar 2 Granny Smith apples, peeled, cored & diced 125g Picota cherries, stoned 1/2 inch peeled Ginger, grated 1/2 tsp Allspice To Serve; Manchego cheese Serrano Ham

Preparation method

Method: 1. Heat the olive oil in a saucepan then add the onions, lower heat and cover, allowing to simmer for 10 minutes. 2. Remove the lid and add remaining ingredients. Stir and simmer 25 minutes. 3. Serve chilled or at room temperature with some crusty bread, Manchego cheese and Serrano ham. Spanish Picota cherry recipe courtesy of Foods from Spain
