Oriental Sweet & Spicy Chilli Chicken Stir Fry

Ingredients

Serves: 2 Cooking Time: 10 minutes Ingredients 2 x 175g skinless chicken breasts, thinly sliced 1 x sachet of Uncle Ben’s Oriental Sweet & Spicy Stir Fry Sauce 1 x 250g pouch Uncle Ben’s Basmati Wok Rice 1 x yellow pepper, deseeded and cut into thin strips 1 x red onion, peeled and cut into thin strips 100g sugar snap peas or mange tout 1 x spring onion, trimmed and sliced diagonally 1 x handful of fresh coriander leaves, torn (optional) 1tbsp vegetable oil

Preparation method

Cooking 1. Heat the oil in a large non stick frying pan or wok, add the chicken and sugar snaps and stir fry for around three minutes 2. Add the yellow peppers and red onion and stir fry for further two minutes, keeping the vegetables crispy 3. Stir in the Uncle Ben’s Oriental Sweet & Spicy Stir Fry Sauce and heat through 4.
