Mini Cinnamon Doughnuts

These baked doughnuts are really quick and easy to make. Doughnut ring mould available from Lakeland Ltd. Makes 18 Prep time 5 mins Cook time 10-12 mins Low fat cooking spray 110g (4oz) self raising flour ½ tsp baking powder 8 tbsp SPLENDA® Granulated 1 egg, beaten 75ml semi skimmed milk 1 tsp groundnut oil ½ tsp vanilla extract 1 tbsp caster sugar ½ tsp mixed spice or cinnamon

Preparation method

1. Preheat the oven to Gas Mark 4/180C/fan oven160C. Spray the mould with low fat cooking spray. 2. Sift the flour and baking powder into a bowl, then stir in the SPLENDA® Granulated. 3. Beat together the egg, milk, oil and vanilla extract. Make a well in the centre of the flour mixture, add the egg mixture gradually, beating continuously to make a smooth batter. 4. Spoon the batter into the rings, being careful not to cover the centre piece. Bake for 10-12 mins until risen and just turning golden. Remove from the oven and cool for 2-3 mins in the mould. 5. Mix together the sugar and cinnamon on a plate. Remove the doughnuts from the mould and dip the base into the sugar mix to coat. Eat warm or set aside to cool before storing in an air tight container.
