Mexican Turkey Waves

Ingredients

Serves 2 Prep time: 15 mins 1 x pack Big Green Tick Turkey Steaks 1 x pack soft flour tortillas 1 x bag mixed salad, washed 4 medium tomatoes, quartered 60ml/4 tbsp sour cream or plain yogurt Guacamole filling 1 x large ripe avocado 30ml/2tbsp olive oil 1 clove garlic, peeled and crushed 1 lime, juice 1 small bunch fresh coriander, chopped 1 pinch ground cumin spice 3ml/½ mild red chilli, seeded and chopped Salt and freshly ground black pepper to season

Preparation method

1. To make the guacamole filling, cut the avocado in half and remove the stone. 2. Scoop the flesh into a bowl and mash with a fork. 3. Add the olive oil, garlic, juice of one lime, chopped coriander cumin and chilli. Season to taste with salt and pepper. 4. Oven or grill the Big Green Tick Turkey Steaks following pack directions. 5. Heat the tortillas in the microwave. 6. Slice the Big Green Tick Turkey Steaks into fingers and bring to the table with the tortillas, tomatoes, sour cream, salad and guacamole.
