The traditional Mexican flavours of fresh cilantro, cumin and lime make a zesty marinade for these grilled chicken and veggie skewers. Pair them with Mexican-inspired sides like beans, rice, salsa and sour cream. Ingredients: · 30 ml olive oil · 1 tsp ground cumin · 2 tbs chopped fresh cilantro · 1 lime, juiced · salt and ground black pepper to taste · 2 skinless, boneless chicken breast halves - cut into 2.5cm cubes · 1 small courgette, cut into 13mm slices · 1 onion, cut into wedges and separated · 1 red bell pepper, cut into 2.5cm pieces · 10 cherry tomatoes
Directions: 1. In a shallow dish, mix together olive oil, cumin, chopped cilantro, and lime juice. Season with salt and pepper. Add chicken, and mix well. Cover, and refrigerate for at least one hour. 2. Preheat grill for high heat. 3. Thread chicken, courgette, onion, red bell pepper, and tomatoes onto skewers. 4.
