McCain Foodservice produces jacket potato filling ideas for summer menus

McCain Foodservice has come up with four recipes for jacket potato toppings to spruce up lunchtime offerings as we move into the summer months.

Dish type
Ingredients

Bacon, Sour Cream & Chive (per potato)
2 slices of bacon
2 tablespoons of sour cream
2 spring onions, finely chopped
A pinch of chives, finely chopped

Preparation method
  • Crisp up bacon under the grill or on the hob depending on oven space/cooking facilities
  • Chop up into small pieces
  • Slice spring onion and chives very finely and mix the majority into the sour cream/Greek yoghurt, leaving some on the side to sprinkle afterwards
  • Once jacket potatoes have been cooked, cut a cross shape on the potato and pull apart. Pour the sour cream mixture in each potato, sprinkling bacon and leftover chives/spring onion
