Luxury Trifle with Griottines

Ingredients

Serves 6 to 8 Custard 250g milk 80g egg yolk 50g sugar 10g corn flour Half a vanilla bean Method: Whisk egg yolk and sugar and corn flour, pour over boiling milk cook until boiling then cool onto tray. Jelly 125g raspberry puree 1 leaf gelatin soaked in cold water Drain gelatin melt into pan and add to puree. Cream 200g whipping cream 40g sugar Vanilla extracts: few drops

Preparation method

Pour jelly into a glass with Griottines, cover with sponge disc, soak in Griottines juice. Spread cold custard, put on other disc of soaked sponge, to finish top up with whisked cream.
