Linguine with walnut and parsley oil

Ingredients

Serves 4 Ingredients: • 120g walnuts, shelled, halved and coarsely ground • 120ml olive oil • 2 garlic cloves, finely chopped • 1tsp salt • 450g linguine • 120g Parmesan • ½tsp freshly ground pepper • ½tsp coarse sea salt

Preparation method

Method: 1) Heat a large pan then add the walnuts, olive oil and garlic, and fry gently for about 3minutes. 2) Remove from the heat and keep aside in the pan. 3) Cook the pasta in boiling salted water for about 5-6 minutes until al dente, stirring occasionally to prevent sticking. 4) Drain the pasta and place in the pan containing the nut and garlic mixture then add the parsley. 5) Toss together, season, sprinkle with a little parmesan cheese and serve immediately.
