Leerdammer Light individual cheese soufflés

Ingredients

Serves 10 Vegetarian INGREDIENTS: 9 eggs 75g butter 75g plain flour 450ml skimmed milk 200g Leerdammer Light, grated Seasoning

Preparation method

METHOD: 1. Separate the eggs. 2. Melt the butter in a large pan. Add the flour, and cook gently for 1-2 minutes, stirring. 3. Gradually add the milk, stirring all the time. 4. Remove from the heat and stir in the grated Leerdammer Light. 5. Cool slightly, and add 3 egg yolks beating well. 6. Whisk egg whites until stiff, and then fold into the mixture using a metal spoon. 7. Pour into 10 grease ramekins and bake for 15-20 minutes at 180°C/Gas Mark 4 or until golden brown. 8.
