Ingredients

Fruit filling: 2 cooking apples, peeled & sliced 1 pear, comice or packham, sliced 1 peach, cut in half, stoned & sliced 1 nectarine, cut in half, stoned & sliced 4 plums, cut in half, stones removed & chopped 150g blackberries, washed 100g Fruisana Fruit Sugar Bread case: 8 - 10 slices medium sliced white bread 50g softened butter 25g Fruisana Fruit Sugar

Preparation method

1. Place all the fruits in a saucepan with the Fruisana and gently cook until just softened. 2. Using a 1.5 litre oven proof pudding basin, lightly grease the sides with the butter and sprinkle with Fruisana. 3. Cut the crusts of bread and shape to fit the basin. Butter the bread and place butter side against the sides of basins. 4. Carefully fill the bread case with the cooked fruit packing it tightly. Shape the bread to fit as a top. Butter the outside pieces and sprinkle with Fruisana. 5. Place on a baking tray and bake in a fan oven 160ºC, electric oven 180º, gas mark 5 for 30-40 minutes until golden and crispy.
