Hearty Chicken and Vegetable Korma

Serves 4 Ready in 10 minutes Cost per serving £2.55 Ingredients 500g jar Uncle Ben’s Korma sauce 2 250g pouches of Uncle Ben’s Express Basmati rice 1 onion, roughly chopped 3 cooked skinless, boneless chicken breasts, cut into chunks 225g small broccoli florets 125g fine green beans, trimmed 2 tsp vegetable oil

Preparation method

Method • Heat the vegetable oil in a large frying pan and fry the onion for 2 minutes, stirring frequently until it begins to brown. Add the chicken and pour over the Uncle Ben’s Korma sauce and simmer gently for 8 minutes • Meanwhile, cook the broccoli and fine green beans in a pan of boiling water for 5-6 minutes until just tender. Drain well and add to the Korma mixture • Heat two pouches of Uncle Ben’s Express Basmati rice according to the instructions, and serve Cook’s tip!
