Ingredients
1kg halibut 1 red pepper 60ml corn oil 2 jalapeno peppers 1 medium onion 2 large tomatoes 2 tsp ground coriander 200ml lime juice Salt and pepper
Preparation method
Heat the oil in a thick-bottomed pan and sweat off the onion until translucent. Add the diced, de-seeded red pepper and coriander. De-seed and thinly slice the jalapenos, add to the pan with the tomato and lime juice and simmer gently for 5 mins. Remove from the heat. Cut the halibut into portions and place them in a buttered oven-proof dish. Adjust the seasoning for the sauce and pour over the fish. Place in the oven (190°) and cook uncovered for 20-25 mins until the fish is cooked. Country of origin: Mexico
