Ingredients
250g roasted shelled groundnuts 1 large onion, rough diced 6 tomatoes halved 800ml chicken stock 6-8 okra fingers sliced
Preparation method
Grind the groundnuts in a processor bowl to a coarse peanut-butter texture. Place in a heavy-bottomed pan with all the other ingredients except the okra, simmer for 45-55 mins, remove from heat and blend until smooth. Return to the pan, season to taste and add the finely sliced okra. Simmer for 5 mins, until okra is soft. Serve. Country of origin: Ghana
