Frozen lime Kiri cheese cake

Ingredients

Serves 25 Vegetarian INGREDIENTS: 625 g Kiri 400 g Digestive biscuits 78 g butter 33 g brown sugar 48 g egg yolk 100 g egg white 0.8 dl powdered sugar 33 g lime juice, fresh squeezed 15 g lime

Preparation method

METHOD: 1. Reduce the digestives to crumbs in a in a food processor with the sugar. Add butter and mix together. 2. Spread dough into a tin with a removable bottom. Keep the tin cool. 3. Beat the Kiri, sugar, and egg yolks together. 4. Whip the cream and egg yolks. 5. Mix cheese into the mixture. 6. Flavour with lime zest and juice. 7. Whisk the egg whites into peaks and carefully pour into the mixture. 8. Pour the mixture into the tin and chill. 9. Remove a while before serving. Decorate with fresh berries if desired.
