Ingredients
450g under-ripe green figs 250g clear honey 450ml white grape juice 50g flaked almonds
Preparation method
Wash figs amd trim the stems, place into a heavy-bottomed saucepan, cover with the grape Juice and slowly bring to the boil. Add the honey, stirring gently. Cover and simmer for 10 mins. Remove cover, simmer uncovered for a further five mins. Remove the figs using a straining spoon, add the flaked almonds to the liquor and reduce the liquor to a light syrup. Pour over the figs and allow to cool before refrigerating. Serve chilled with whipped cream flavoured with rose water. Country of origin: Tunisia
